 One of the signature dishes of Hiroshima, the local okonomiyaki (the name means ‘grilled the way you like it’) differs from its Kansai area counterpart by being prepared in layers, rather than mixed together in a jumble. Hiroshima style okonomiyaki is a thin crepe topped with layers of noodles, vegetables, meat, egg and a wide variety of other possible toppings, all covered with a rich sauce and seaweed powder. It is, in short, a dish far better eaten than described, so if you’re in Hiroshima don’t pass it by. It’s famous for good reason.

 
Okonomi-mura is located near the east end of Hondori. Go to the south side of Parco Department Store, and you’ll find a small park. Okonomi-mura is just south of the park and contains 28 okonomiyaki stalls to choose from. A personal favorite is Atomu, on the fourth floor.

 
Alternately, you can make the trip to Lopez Okonomiyaki, where Guatemalan owner Fernando Lopez makes an excellent Hiroshima style okonomiyaki. He trained locally, and knows what he’s doing. The main difference is that you can ask him to toss in jalapeno peppers or order a side of fried tripe with adobo salsa and listen to Latin music while you eat. From Yokugawa Station, take a left (going east), cross the main road (Route 54) and take a left at the motorcycle shop. You'll see Lopez's on the right, under an emerald green canopy. Lunch: 11:30-2pm. Dinner: 5pm-10pm. Closed Sundays.
