Tsukemen is cold ramen-style noodles with a dipping sauce on the side. The version most popular in Hiroshima, typified by shops like Bakudan, uses an angry red, fiery dipping sauce that can be adjusted from relatively mild to idiotic. Many Hiroshima natives claim this as a local dish. Many people from outside Hiroshima claim otherwise. Steer clear of the raging controversy and just eat your noodles. Wherever they’re from, they’re very, very good.
For a taste of Bakudan’s noodles, head south on Namiki-dori from Parco Department Store at the east end of Hondori.. Cross Peace Boulevard, the large four-lane street. Continue south and you’ll find a Bakudan on your left behind a set of red curtains.
